  • Vanilla ice cream
  • 1 tablespoon grated lime rind
  • 2 tablespoons dark rum
  • 3 tablespoons fresh lime juice
  • 3 tablespoons sugar
  • 2 ripe mangoes

Step 1

Peel the mangoes, ensuring all green flesh is removed. Carefully cut the mango flesh away from the pit and slice it into ½-inch thick pieces. Discard the pit.

Step 2

In a bowl, combine the sugar, dark rum, grated lime rind, and fresh lime juice (or lemon-lime mix). Mix well until the sugar is dissolved. Add the sliced mango pieces to the mixture and gently mix to coat them evenly.

Step 3

Chill the mango mixture for a couple of hours before serving. Serve the chilled mangoes on their own in chilled glasses or over vanilla ice cream.
