Greek Style Lavender Roasted Potatoes
Traditionally, these are seasoned with oregano ~ however ~ the lavender replaces the oregano in this recipe, and works wonderfully.

Ingredients
- 6 pounds potatoes (red, russets, golden, or 8 medium)
- 2 petite potatoes red or golden potatoes(optional)
- 3 cloves garlic, minced or crushed
- 1-2 lemons lemon juice
- 1 tablespoon Little Sky culinary lavender (ground or minced)
- 3-4 tablespoons olive oil
Instructions
Step 1
<a href="/8BSVY4LZ">Wash </a>and quarter potatoes.
Step 2
<a href="/H3S4YV46">Preheat oven </a>to 350° F.
Step 3
If using petite potatoes leave whole or <a href="/XZBDDD5G">cut </a>in half. In a <a href="/P5CFVDV7">roasting </a>pan add the oil, garlic, lavender and lemon and <a href="/DRM2WPZ4">stir </a>to <a href="/S6W4FR7F">blend.</a>

Add potatoes and toss.
Step 5
Cover the potatoes for the first 1/2 hour with foil. Remove foil, toss, add more olive oil or lemon <a href="/QDWRNXYW">juice </a>if needed, and <a href="/RNT367Z2">bake </a>till tender (1/2 hour more).
