Ingredients
- 3 cups whole wheat couscous, cooked according to package directions
- 1/2 cup pineapple jam, low sugar
- 1/2 can mild green chiles
- 2 cloves garlic, minced
- 1 small lemon, juiced and zested
- 2 tablespoons onion, chopped
- 1/4 teaspoon chipotle powder
- 1 medium tomato, seeded and chopped
- 1/4 cup onion, chopped
- 1 cup kidney beans, rinsed and drained
- 1 medium yellow bell pepper, seeded and chopped
- 1/2 tablespoon olive oil

Step 1
Combine the pineapple jam, mild green chiles, minced garlic, lemon juice and zest, 2 tablespoons chopped onion, and chipotle powder in a medium bowl. Remove half of this mixture to a blender and puree until smooth to create a sauce.

In a large bowl, combine the chopped tomato, 1/4 cup chopped onion, rinsed and drained kidney beans, seeded and chopped yellow bell pepper, and the cooked whole wheat couscous with the remaining pineapple mixture from the medium bowl. Stir in the pureed sauce and combine all ingredients well.
