I know, you just read the title and now need a minute to get a tissue to get that little drool spot... go ahead, i'll wait.... Ok, lets bake! These muffins are tender and simple, what makes them over the top fabulous is the amazing french toast inspired top! These muffins are dipped into warm butter & syrup then into a cinnamon sugar mix!!!! Oh yes, this is an incredible muffin!

Ingredients

  • 1 1/2 sticks butter, melted and cooled
  • 4 cups flour
  • 1 1/2 cups sugar
  • 1 tablespoons baking powder
  • 1/4 teaspoons salt
  • 1 tablespoons cinnamon
  • 2 eggs
  • 1 1/2 cups buttermilk
  • 1 cup syrup
  • 1/4 stick butter
  • 1 cup sugar
  • 2-3 tablespoons cinnamon

Instructions

Preheat oven to 350 degrees F.

In a large bowl, stir together the flour, 1 1/2 cups sugar (for muffins), baking powder, salt, and 1 tablespoon of cinnamon (for muffins).

To the same bowl, add in the cooled butter, eggs, and buttermilk. Mix until just combined, being careful not to overmix to ensure tender muffins.

Using an ice cream scoop, fill a lined cupcake pan with the muffin mixture.

18 minutes or until done

Bake for approximately 18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

While the muffins are baking, prepare the topping. In a small saucepan over low heat, add 1 cup syrup and 1/4 stick butter. Cook until the butter is melted and the mixture is just warmed. In a separate small bowl, mix the 1 cup sugar (for topping) and 2-3 tablespoons cinnamon (for topping).

Once baked, allow the muffins to cool enough to handle. Dip the top of each muffin first into the warm butter-syrup mixture, then immediately into the cinnamon-sugar mixture. (Note: This step can be messy, but the result is worth it!)
