- cup Fresh Cranberries
- cup Chopped Nuts (walnuts or pecans)
- cup Diced Tart Apple (Granny Smith is great)
- 1 teaspoon Vanilla Extract
- cup Vegetable Oil
- cup Brown Sugar (packed)
- 2 Eggs
- teaspoon Salt
- 1 teaspoon Cinnamon
- 1 teaspoon Baking Soda
- 1 cup White Flour
- cup Whole Wheat Flour

Step 1

Break eggs in a <a href="/technique/WRFN6T6X/separate">separate</a> bowl, add <a href="/technique/D434P8MH/brown">brown</a> sugar & <a href="/technique/3CYMY2D7/whisk">whisk</a> until smooth. <a href="/technique/3CYMY2D7/whisk">Whisk</a> in oil & vanilla. Add apple, cranberries & nuts.
Step 2
<a href="/technique/8M4FMXQ6/fold">Fold</a> in <a href="/technique/RF7SRX43/dry">dry</a> ingredients until just moistened. <a href="/technique/NX588QBK/spoon">Spoon</a> batter into muffin cups. <a href="/technique/RNT367Z2/bake">Bake</a> 20-25 minutes until <a href="/technique/D434P8MH/browned">browned</a> & firm to the touch. The recipe says "do not <a href="/technique/YCPJKCW5/freeze">freeze"</a> but I have <a href="/technique/YCPJKCW5/frozen">frozen</a> these with no ill result. (I had to, I hate it when people tell me not to do things!:-)
