  • 4 cup cooked and mashed potatoes
  • 1/4 cup unsalted butter
  • 2 medium onions, finely chopped

Cook the onions in the butter over a low <a href="/technique/3J4YNDT6/flame">flame</a> until soft but no <a href="/technique/HT4RHHGB/colored">colored.</a> Add the potatoes and <a href="/technique/7S3QCKWK/mix">mix.</a> With an electric mixture, carefully <a href="/technique/3CYMY2D7/beat">beat</a> the creme fraiche and and onions into the potatoes, until they are light and fluffy. <a href="/technique/H7TNTGFZ/season">Season</a> with <a href="/technique/DPSVTKVY/salt">salt</a> and pepper.
