- 1/2 teaspoons ground cumin
- 1/2 teaspoons black pepper
- 1/2 teaspoons salt
- 1 tablespoons sugar
- 1 tablespoons vinegar
- 1 lemon lemon
- 1 box spaghetti
- 5 cloves garlic, chopped
- 1 head broccoli, cut into spears
- 2 pounds boneless pork loin, cut into strips
- olive oil
- red pepper flakes
Instructions
Step 1
Place pork strips in the marinade (made from ground cumin, black pepper, salt, sugar, vinegar, and lemon juice) and refrigerate.
Step 2
Heat a griddle with a drizzle of olive oil. Place the marinated pork strips on the hot griddle and grill until cooked through.
Step 3
While the pork is grilling, cook the spaghetti according to package directions. Approximately 3 to 4 minutes before the spaghetti is done, add the broccoli spears to the spaghetti water.
Step 4
Drain the cooked broccoli and spaghetti. Plate the spaghetti and broccoli, then top with the grilled pork.
Step 5
In a small frying pan, heat a drizzle of olive oil. Add the chopped garlic and a few dashes of red pepper flakes. Cook until the garlic is fragrant and slightly golden. Pour this fragrant oil mixture over the plated broccoli, spaghetti, and pork. Squeeze a quarter of a lemon over the top and toss gently to combine.
