Simply Spicy Cod Wraps

This recipes is adapted from a shrimp recipe on allrecipes.com. I've used cod and cabbage instead of the shrimp and lettuce originally called for, and upped the nutrition by adding celery and placing it all in a low calorie wrap. Crunchy and delicious.

Ingredients

  • 1 pound cod fillets
  • 1 cup shredded cabbage
  • 1/2 cup celery, chopped into small pieces
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons cilantro, finely chopped
  • 3 tablespoons low fat mayonnaise
  • 1 tablespoon chipotle peppers in adobo sauce, finely minced
  • 2 teaspoons lime juice
  • 1/2 teaspoon lime zest
  • 1/2 teaspoon cumin

Step 1

Spray a large non-stick <a href="/MYJ2HRB7">skillet </a>with cooking spray and place over medium <a href="/XZFHRHHF">heat. </a>Add cod and cook 5 – 7 minutes until cod is just cooked through and flakes at the thickest part.

In a large bowl combine the remaining ingredients.

When cod is cooked, break apart into large chunks and <a href="/8M4FMXQ6">fold </a>into <a href="/W5YYKHT2">salad.</a>
