  • 1/2 teaspoons Turmeric powder
  • 1 teaspoons Mustard seed
  • 4 tablespoons Oil
  • 2 tablespoons Kasoori methi
  • 1 teaspoons Jaggery powder
  • Salt
  • 2 teaspoons Extracted Tamarind pulp
  • Curry leaves
  • 4 tablespoons Rasam powder
  • 1/2 cup Roasted Peanut powder
  • 1/2 cup Roasted sesame powder
  • 1 medium-sized Onion
  • 10 Small round Brinjals
  • 1 cup Water

Instructions

Step 1

Mix Sesame, Peanut and Rasam powder, by adding little salt.

Slit 4 sides of Brinjal in the bottom holding the top intact and stuff with above mixture.

Chop Onion in to small pieces.

In a deep Kadai, heat Oil and add mustard seeds.

When mustard seeds are done.

Add turmeric powder, curry leaves and chopped Onion.

Fry for few seconds.

Now start placing stuffed Brinjals carefully.

Sprinkle little water and salt and close lid.

Allow Brinjal to cook on low flame.

Pierce a knife in to Brinjal to see whether Brinjal is cooked

When Brinjal is done add 1 cup of water, Tamarind extract and Jaggery and allow it to boil.

Add remaining powder mix (Sesame, Peanut and Rasam powder) and Kasoori methi and mix carefully.
