Curried Okra / Bhindi Ki Sabji

Ingredients

1 pound fresh okra
1/8 teaspoon turmeric
1/4 teaspoon red pepper powd
1/4 teaspoon ground cumin
1/4 teaspoon dried mango powd
Salt to taste.

Preparation

Rinse and dry Okra with a paper towel and set aside .

Trim the ends off the Okra and cut it lengthwise.

Chop the onions lengthwise as well.

In a nonstick fry pan, gently saute okra and onions in oil with the above dry ingredients, except Mango powder.

Cover and cook approximately 15 minutes on medium low flame, till done.

Cook for another 10 minutes on low flame till the stickyness is gone.

Mix in Mango powder gently and serve hot.

About

Okra cooked this way is also called "Bhindi ki sabji" in India.
It is generally eaten with "roti" (whole wheat tortilla) and a side of fresh home made yogurt.
Can also roll in whole wheat or tomato tortillas with a dollop of yogurt mixed with Deva Naturals, Spicy cilantro chutney!
Enjoy with family and friends for a quick lunch or part of any dinner !
