Stuffed Peppers With Beef and Couscous

A sweet red bell pepper mounded with juicy ground beef, nutty whole wheat couscous, a blend of herbs, and parmesan cheese. This meal truly satisfies. I like to serve this red beauty on a bed of creamy parmesan couscous with fresh basil and wilted kale.

  • 1 large red bell pepper
  • 1/4 pound lean ground beef (at least 90% lean)
  • 1/2 cup cooked whole wheat couscous
  • 1 teaspoon Italian seasoning (a blend of basil, thyme, oregano, marjoram, rosemary, garlic, and red pepper flakes)
  • 1/2 teaspoon garlic powder
  • Pinch salt
  • Pinch pepper
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon ketchup
  • 1 teaspoon dijon mustard
  • 1 tablespoon grated parmesan cheese
  • 1 teaspoon ketchup
  • 1/4 teaspoon Worcestershire sauce
  • 1/2 cup shredded cheese of your choice(optional)

Step 1

<a href="/H3S4YV46">Preheat </a>the oven to 350° <a href="/XZBDDD5G">Cut </a>red pepper in half and vertically and remove <a href="/FYFCQVPR">seeds.</a>

In a large bowl, <a href="/7S3QCKWK">mix </a>all of the remaining ingredients with your hands. Divide meat mixture in half and <a href="/XSQB5XPJ">stuff </a>each in one of the bell pepper <a href="/JXYLJGZ5">halves.</a>

Brush the <a href="/R34ZSY3M">tops </a>of the <a href="/XSQB5XPJ">stuffed </a>peppers with a mixture of 1 tsp ketchup and ¼ tsp Worcestershire sauce. Place peppers in a small <a href="/RNT367Z2">baking </a><a href="/QQVZX64Y">dish </a>and <a href="/RNT367Z2">bake </a>for 30 minutes.

Sprinkle with cheese if desired and <a href="/RNT367Z2">bake </a>for an additional 5 minutes.
