Chipotle Bacon Bombs on a Stick

Patti and I are still working on a few treats to serve “Off the Grill”. We will be at the Weekly Tasting Event at Craft Brewing Company in Lake Elsinore, Ca. Can’t wait, it sounds like fun with plenty of good beer involved so we are right on it. With us, it has to be something smoked off the grill. A great start for anything we come up with. How about Chipotle Bacon Bombs on a Stick? We let our “Crash Test Dummies” try these out and they were a huge hit. There were no survivors…and no need for the main course. We all could have just eaten these for hours. Patti got me a 10 pound bag of the best frozen meatballs she could find. She wrapped them with a strip of bacon and put them on skewers. Liking things with a little ZING I gave them a good sprinkling of Jac’s Tailgaters Smokin’ Dust Chipotle Seasoning and used Grandville’s Cajun BBQ Jam. Grandville’s Cajun is about a 6 or 7 in ZING for most folks.

  • Jac’s Tailgaters Smokin’ Dust Chipotle Seasoning
  • Grandville’s Cajun BBQ Jam
  • Bamboo skewers
  • 1 pounds bacon, sliced in half (peppered bacon optional)
  • 24 frozen pre-cooked beef or turkey meatballs, thawed

Instructions

Step 1

30 minutes

Soak bamboo skewers in water for 30 minutes. Meanwhile, line the drip pan of your smoker/grill with aluminum foil for easier cleanup.

Cut bacon slices in half. Wrap one half-slice of bacon around each thawed meatball. Thread each bacon-wrapped meatball onto a bamboo skewer to secure the bacon.

Season the assembled bacon bombs generously with Jac’s Tailgaters Smokin’ Dust Chipotle Seasoning. Place the seasoned skewers on a platter.

30 minutes

Set the smoker/grill temperature to 180 degrees F. Place the meatball skewers directly onto the grill and smoke for 30 minutes.

25 minutes

After 30 minutes, increase the grill temperature to 350 degrees F. Cook for approximately 15 minutes, then brush the bacon bombs with Grandville’s Cajun BBQ Jam, roll them, and brush again. Continue cooking at 350 degrees F for about 10 more minutes, or until the bacon is crisp and the sauce has caramelized.
