Healthy Chocolate Mousse with Chia Seeds, Almond Milk & Banana

A chocolate mousse that is also healthy – can it get even better? I love chia seeds, and I use them in so many dishes, but my favorite way to use them is in a mousse like this. I eat this chocolate mousse for breakfast, but you could easily eat it as a dessert as well. It takes some time to make it, since you have to mix the seeds with the almond milk the night before, but it’s worth the effort. Even my husband loves it, and believe it or not, he asked, if we could have the chocolate mousse instead of scrambled eggs last weekend!

  • 2 tablespoons chia seeds
  • 1 1/2 cup almond milk (unsweetened)
  • 1 small banana, sliced & frozen
  • 1 tablespoons cocoa powder
  • roasted hazelnuts(optional)
  • toasted coconut flakes(optional)
  • cocoa nibs(optional)

Instructions

The night before: Put chia seeds and almond milk in a bowl and set the bowl in the refrigerator overnight.

Slice the banana, put it in a bag and freeze until the following day.

The day after: The chia seed mixture will appear frothy. Pour it into a food processor or blender, and add the frozen banana slices and cocoa.

Blend to a fine creamy mousse consistency. Serve in a bowl and garnish with chopped, toasted hazelnuts, coconut flakes and cocoa nib.
