  • 1 medium zucchini, 2 inch
  • 1 small onion
  • 2 cloves garlic
  • 1 cup sliced baby portabella mushrooms
  • 1/2 cup chopped spinach
  • 1 1/2 teaspoons Herbes de Provence
  • 1/2 teaspoon salt
  • 1 teaspoon cayenne pepper
  • 2 tablespoons extra-virgin olive oil

Add murshrooms, onions, and garlic and saute' for 5 minutes. Add spinach,zucchini, and spices and continue cooking for 5 more minutes.
