1 12 ounces package of dry Cheese and Spinach Tortellini
2 tablespoons unsalted butter
1 cup mascarpone
4 tablespoon parmesan cheese
Cook the tortellini in salted water and according to package directions.
Meanwhile, in a skillet melt the butter and add the peas. Season with salt and pepper and cook until warm.
Once the tortellini are cooked and drained, return them to the cooking pan and add the peas and mascarpone
Serve immediately with some freshly grated parmesan cheese.
