- 10 berries allspice
- 1 teaspoon cloves
- 1 cinnamon stick
- 450 gram caster sugar
- 600 ml white wine vinegar
- 450 ml cold steeped tea
- 450 gram prunes
Instructions
Step 1
In a large bowl, cover prunes with tea and let stand 12 hours.
Step 2
In a large saucepan cook prunes and liquid over low <a href="/technique/XZFHRHHF/heat">heat</a> for 15-20 minutes until prunes are plump.
Step 3
In a large saucepan, bring vinegar, sugar and spices to the <a href="/technique/W7VKDJHH/boil">boil.</a> <a href="/technique/H3TYV2MZ/reduce">Reduce</a> <a href="/technique/XZFHRHHF/heat">heat</a> and <a href="/technique/GFSF4J5F/simmer">simmer</a> 5 minutes. Add prunes and liquid and <a href="/technique/GFSF4J5F/simmer">simmer</a> 5 minutes. Using a slotted <a href="/technique/NX588QBK/spoon">spoon</a>, pack hot prunes into hot jars and pour over hot syrup.

Cover and <a href="/technique/K4VJ7RZ7/seal">seal</a>.

Let mature 1 week before using.
