- 1 cup nonfat cheddar cheese, shredded
- 10 ounce frozen chopped spinach, thawed and drained
- 1 cup 1% low-fat milk
- 8 eggs, slightly beaten
- 1 jalapeno pepper, seeded and chopped
- 8 green onions, sliced
- 1 cup salsa
- 2 medium tomatoes, chopped
- 1 teaspoon salt(optional)
- 1 cup all-purpose flour
- 1 teaspoon chili powder
- 7 corn tortillas
