  • 1/3 cup Greek yogurt, plain
  • 1/3 cup lite coconut milk
  • 2 egg whites
  • 1/2 teaspoons almond extract
  • 1/3 cup whole wheat pastry flour
  • 1/2 teaspoons baking soda
  • 1/2 teaspoons sugar
  • 1 tablespoons unsweetened cocoa powder
  • 1 tablespoons unsweetened shredded coconut
  • 1 tablespoons mini chocolate chips
  • maple syrup (sugar free)(optional)

Instructions

Step 1

Mix Greek yogurt, egg whites, coconut milk, and almond extract into a small bowl.

In a separate bowl, combine flour, baking soda, sugar, and cocoa powder.

Combine the wet and dry ingredients and whisk until evenly mixed.

Fold in the shredded coconut and mini chocolate chips.

1-2 minutes on each side

Place 1/4-cup of batter onto a non-stick skillet. Cook until bubbles start appearing through the top of the pancake, then flip.

Top with maple syrup, a pinch of coconut, and a few mini chocolate chips.
