- 3 breasts chicken, large dice (about an inch)
- 2 bell peppers red bell peppers, diced
- 1 bell pepper green bell pepper, diced
- 1 can 20 ounce pineapple chunks with 100% pineapple juice
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 2 tablespoons light brown sugar
- 3 tablespoons ketchup
- 5 cloves garlic, grated
- flour for dusting
- salt and pepper
- olive oil
- handful chopped parsley
Instructions
Step 1
Start by making the sauce so it has a little time to meld. In a bowl mix together all the juice from the can of pineapple, soy sauce, vinegar, brown sugar, ketchup and garlic.
Step 2
In another bowl toss together the diced chicken seasoned with a little salt and pepper and enough flour just to lightly coat.
Step 3
In a large pot, over medium high heat, add enough olive oil to coat the bottom of the pan. Once the oil is nice and hot, brown the chicken on the two largest sides of the pieces. Do this in a couple of batches so you don't overcrowd the pan and drop the temp of the oil.
Step 4
Once all the chicken is browned, return all the chicken to the pot, add in the pineapple chunks and peppers. Stir in the sauce and simmer on the lowest setting with the lid on for 1 hour.
Step 5
Remove the lid and simmer for another 20 minutes. Finish with a handful of chopped parsley.
