- Salt and Pepper(optional)
- 1/4 teaspoons fresh chives, minced
- 1 hardboiled egg, peeled and diced
- 2 tablespoons mayonnaise
- 1/2-1 teaspoons Dijon mustard
- 1/4 teaspoons paprika

Combine all ingredients in a small bowl, mixing well to combine.

Serve between slices of (gluten free!) bread, as filling in a lettuce wrap, or over lettuce as a salad.
