  • 11 pieces Pears, peeled, with stalks
  • 1.125 quart Red Wine
  • 1.375 sticks Cinnamon sticks
  • 6.875 berries Allspice berries
  • 5.5 whole Whole cloves
  • 1.375 cup Granulated or Brown Sugar
  • 3 tablespoons Clear Honey
  • 1 teaspoon Lemon zest
  • 1 teaspoon Orange zest
  • Root ginger(optional)
  • Stem ginger with its syrup(optional)
  • Cream(optional)

Instructions

Step 1

Peel the pears, keeping their stalks intact.

If desired, place the cinnamon sticks, allspice berries, and cloves in a muslin bag.

In a pot, gently heat the red wine, granulated or brown sugar, and clear honey until the sugar and honey are fully dissolved.

Add the peeled pears to the pot. Cover and simmer for at least 20 minutes; this can be done on the stovetop or in an oven.

Carefully remove the pears from the pot. Continue to simmer the remaining red wine mixture until it reduces to a syrupy consistency.

Serve the pears hot, warm, or cold, optionally with cream.

For an alternative flavor, consider adding some root ginger or stem ginger with its syrup to the reducing wine mixture.
