- 11 pieces Pears, peeled, with stalks
- 1.125 quart Red Wine
- 1.375 sticks Cinnamon sticks
- 6.875 berries Allspice berries
- 5.5 whole Whole cloves
- 1.375 cup Granulated or Brown Sugar
- 3 tablespoons Clear Honey
- 1 teaspoon Lemon zest
- 1 teaspoon Orange zest
- Root ginger(optional)
- Stem ginger with its syrup(optional)
- Cream(optional)
Instructions
Step 1
Peel the pears, keeping their stalks intact.
Step 2
If desired, place the cinnamon sticks, allspice berries, and cloves in a muslin bag.
Step 3
In a pot, gently heat the red wine, granulated or brown sugar, and clear honey until the sugar and honey are fully dissolved.
Step 4
Add the peeled pears to the pot. Cover and simmer for at least 20 minutes; this can be done on the stovetop or in an oven.
Step 5
Carefully remove the pears from the pot. Continue to simmer the remaining red wine mixture until it reduces to a syrupy consistency.
Step 6
Serve the pears hot, warm, or cold, optionally with cream.

For an alternative flavor, consider adding some root ginger or stem ginger with its syrup to the reducing wine mixture.
