  • 1/4 teaspoon ginger
  • 1 teaspoon cornstarch
  • 1 can chicken broth
  • 2 tablespoons butter
  • 1/3 cup chopped celery
  • 1/3 cup soy sauce
  • 1/3 cup sugar
  • 1 cup regular uncooked rice
  • 1/2 pound fresh mushrooms
  • 4 cornish game hens

Step 1

Preheat oven to 350 degrees F. Wash cornish game hens and pat dry.

In a saucepan, sauté butter (or margarine as mentioned in the recipe text) and mushrooms. Add chicken broth and rice. Bring to a boil, then cover, reduce heat, and cook for 20 minutes.

1 hour 30 minutes

Stuff hens with the prepared rice mixture. Place hens breast-side up in the oven. Brush hens with butter (or margarine). Bake for 1 hour 30 minutes, brushing with butter (or margarine) every 20 minutes during this period.

20 minutes

During the last 15 minutes of the initial baking period (from Step 3), prepare the glaze. In a saucepan, combine sugar, soy sauce, ginger, and cornstarch. Bring the mixture to a boil. Remove hens from the oven, brush them with this glaze, and return to the oven for an additional 20 minutes.
