We had left overs and last night I felt like a short order cook as everyone wanted something different. I made raviolis Sunday night and my son had secured that the left overs were his. I am thankful for that because I filled them with fresh spinach, ground sirloin, and this time with chicken also. I had some chicken left over and decided that a refreshing salad was in order. Perfect summer dinner for us. Bon Appetit!

  • Salt
  • 1 tablespoons red wine vinegar
  • 3 tablespoons olive oil
  • Tomatoes, cut in wedges
  • 1 tablespoons Herbs Goat cheese
  • Cooked chicken, chopped
  • Green leaf salad

Instructions

Step 1

In a large bowl, prepare the vinaigrette by whisking together the olive oil, red wine vinegar, and salt. Mix well.

Add the chopped cooked chicken and green leaf salad to the bowl with the vinaigrette. Gently mix to combine all ingredients.

Serve the chicken salad on a chilled dish. Crumble and add the desired amount of Herbs Goat cheese over the top.
