Chicken Tinola

Ingredients

1 whole chicken
1 cup chili leaves
2 cloves garlic, crushed
1 small onion, quartered
2 inches fresh ginger, peeled, and sliced
1 tablespoon Oil
1 tablespoon fish sauce or patis
1 green papaya, peeled and de-seeded,cut in 2 inch cubes may 1 cup Moringa leaves or malunggay leaves (optional)

Preparation

Clean chicken and cut into serving pieces. Saute garlic, onion, ginger and add the chicken pieces and green papaya.

Season with fish sauce or kosher salt, continue to cook until chicken and papaya's are tender.

Add chicken stock and allow to simmer for 30 minutes.

Turn the heat off and add in the Moringa and chili leaves. Let stand for 10 more minutes. Season to taste.
