  • 2 pounds small red potatoes
  • 1/2 cup pesto
  • 2 tablespoons chopped chives(optional)
  • to taste salt(optional)
  • to taste pepper(optional)
  • 1/2 cup Parmesan cheese
  • 1/2 cup olive oil
  • 1/4 cup pine nuts
  • 2 cups fresh basil leaves
  • 2 cloves garlic, chopped

Instructions

Prepare pesto (see recipe).

Scrub potatoes and <a href="/technique/XZBDDD5G/cut">cut</a> in half.

Combine with pesto and <a href="/technique/DPSVTKVY/salt">salt</a> and pepper.

Pesto:Place garlic, basil, pine nuts and olive oil in food processor. Process until smooth.
