- 2 teaspoons mustard seeds
- 2 teaspoons celery seeds
- 8 pieces medium courgettes
- 4 pieces medium onions
- 3 stalks celery
- 1 cup salt
- 2 cups caster sugar
- 2 cups white vinegar
Instructions
Step 1

Drain in a colander and <a href="/technique/8BSVY4LZ/washes">wash</a> under running water to remove the <a href="/technique/DPSVTKVY/salt">salt</a>.
Step 2
Place the sugar, vinegar and spices into a medium sized saucepan. Bring to the <a href="/technique/W7VKDJHH/boil">boil</a> and <a href="/technique/GFSF4J5F/simmer">simmer</a> for 2 minutes, <a href="/technique/DRM2WPZ4/stirring">stirring</a> until the sugar <a href="/technique/PXKXVQTM/dissolve">dissolves.</a> Add the prepared vegetables,return to the <a href="/technique/W7VKDJHH/boil">boil</a>, remove from <a href="/technique/XZFHRHHF/heat">heat</a> and allow to stand for 2 hours.
Step 3
Return mixture to <a href="/technique/XZFHRHHF/heat">heat</a>, bring to the <a href="/technique/W7VKDJHH/boil">boil</a> and <a href="/technique/GFSF4J5F/simmer">simmer</a> for 5 minutes. Remove from <a href="/technique/XZFHRHHF/heat">heat</a> and <a href="/technique/NX588QBK/spoon">spoon</a> into <a href="/technique/XZFHRHHF/heated">heated</a> jars, <a href="/technique/K4VJ7RZ7/seal">seal</a> and <a href="/technique/GZFHJC5K/cool">cool</a>.
