  • 1 pound ground chicken
  • 1 pound ground beef
  • 1 pound ground pork
  • 1 egg egg
  • 1/4 cup almond meal
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon red pepper flakes(optional)
  • 3 cans Muir Glen Tomato Basil Soup
  • 1 can full fat coconut milk
  • 1 tablespoon olive oil

Instructions

Step 1

Combine ground chicken, ground beef, ground pork, egg, almond meal, garlic powder, onion powder, and red pepper flakes (if using) in a mixing bowl. Shape the mixture into approximately 40 small to medium-sized meatballs.

15 minutes

Place the meatballs on a baking sheet and bake for 15 minutes at 350°F (175°C).

Heat 1 tablespoon of olive oil in a large saucepan or pot over medium-high heat.

Add the 3 cans of Muir Glen Tomato Basil Soup and 1 can of full fat coconut milk to the pot. Heat to a low simmer, then reduce heat to medium-low to maintain the simmer.

30 minutes

Remove the meatballs from the oven and add them to the simmering sauce. Cover the pot and allow the meatballs to simmer in the sauce for another 30 minutes.
