- 6 escalopes pork, trimmed
- 1 tablespoon balsamic vinegar
- 1 tablespoon salted butter
- 1 tablespoon olive oil
- 6 cloves garlic, cut in half
- 1/4 cup cream sherry
- 3 sprigs rosemary
- 15 berries juniper, crushed lightly
- to taste salt and pepper(optional)

Boil the cloves of garlic for 5 minutes to soften; drain and set aside.

Brush the pork with some of the balsamic vinegar; season with salt and pepper.

Melt the butter and olive oil in a large pan on medium heat.

Add the pork, sear until brown, about 3 minutes. Turn over and cook for 1 minute.

Add the sherry, remaining balsamic vinegar, rosemary sprigs, garlic, and juniper berries.

Simmer for 2 minutes, then remove the pork. Continue to simmer the sauce until slightly thickened.

Spoon sauce over pork. Serve with noodles and beans.
