- cup salsa
- cup grated cheddar cheese
- 4 tortilla shells (10" dia)
- 1 teaspoon butter
- cup diced red bell pepper
- cup diced green bell pepper
- cup diced red onion
- 1 tablespoon chopped black olives
- 8 large eggs, beaten

Melt the butter in a pan over medium heat. Add the red and green bell peppers, onion, and olives. Cook until the vegetables are tender. Add the beaten eggs to the pan and stir until the eggs are fully cooked.

Meanwhile, heat the tortilla shells in either the microwave or the oven. Spoon 1/4 of the cooked egg mixture onto each tortilla. Top with cheese, salsa, and cilantro. Serve.
