McMake Your McOwn Chicken McNuggets!

Ingredients

1 large boneless skinless chicken breast *this should get you at least 10-12 nuggets depending how on how big or small you make them
1 large egg
Panko bread crumbs *gets you the crispiest coating!
Salt and Pepper *I’ve also added chili powder and cayenne pepper

Preparation

1. In one plate add your panko bread crubs and season with salt and pepper. In another plate or bowl break your egg and add 2 teaspoons water and season with salt and pepper or your desired seasonings.

2. Add your chicken breast to your food processor and pulse for about 4-5 minutes. Remove and shape into your desired portions and shape. First dip in to the egg mixture then in the panko mixture.

3. Heat your oil, canola, vegetable or extra virgin and fry each nugget for about 2-3 minutes on either side.

If you would like a quick BBQ sauce: ketchup, worcestershire, honey…to taste! Accompany with a vegetable or sweet potato fries! You could even use salmon and do a salmon nugget with an asian dipping sauce or tartar sauce! OR you could make a patty and create your own sandwich!

The couple of times I’ve actually bought fast food chicken nuggets, it gave me a gut ache and rightfully so! I wanted to feed my friends daughter something good for lunch instead of her usual microwaveable mac ‘n cheese and came up with this idea and recipe on the fly!

The consistency of the chicken is key here and thought to throw my chicken breast into the food processor and I have to say…I nailed it! The beauty of this recipe is that you can experiment by either adding different seasoning to the bread crumbs or adding vegetables or herbs into the chicken.
