- 1.0 teaspoon Sugar
- 0.5 cup fresh cilantro or mint
- 1.0 clove garlic, minced
- 2.0 Jalapeno peppers, seeded and minced
- 1.0 medium Red onion, finely chopped
- 1.0 medium Pineapple, peeled, sliced into rings

Brush pineapple slices lightly with oil (or spray with cooking spray). Place on a hot grill and cook, turning once or twice, until lightly browned on both sides. Let cool and finely dice (discarding hard core). Mix with remaining ingredients. Allow to marinate at least 2 hours at room temperature or cover and refrigerate for up to 3 days. Serve at room temperature.
