  • 1.0 pound fresh pizza dough
  • 2.0 cup mixed greens
  • 1.0 small onion
  • 3.0 cup roasted butternut squash
  • 2.0 tablespoon toasted pine nuts
  • 4.0 slices bacon
  • balsamic reduction
  • 1.0 cup manchego cheese(optional)
  • 1.0 pound fresh mozzarella cheese

Prepare balsamic reduction: In a small pot, boil 1 cup of balsamic vinegar for a few minutes until it is reduced by half and thickened.

Preheat oven to its highest internal temperature.

Caramelize the onion by sautéing it over medium heat in oil on the stove top.

Fry bacon until crispy, then dice into bite-sized pieces.

While the onion caramelizes and bacon fries, roll out the pizza dough.

Break up fresh mozzarella and distribute over the rolled out pizza dough.
