- 6 cups chicken stock
- 2 eggs eggs, beaten
- 2 tablespoons chopped scallions
- 1/2 teaspoons Asian sesame oil

Step 1
Bring chicken stock to a boil, then lower the heat to a simmer. Gradually add the beaten eggs in a thin stream, stirring constantly.

Remove the soup from the heat and stir in the chopped scallions and Asian sesame oil.

For variations: If desired, incorporate ½ cup slivered bamboo shoots and dried forest mushrooms (previously soaked and slivered) into the broth. If using these variations, simmer the broth for 15 minutes before adding the eggs (as described in Step 1).
