- 1 cup whole walnuts
- 1/2 cup sugar
- 1 cup butter, softened (2 sticks)
- 2 cup all-purpose flour
- 1 teaspoon rum extract
- 1 teaspoon vanilla extract
- 3/4 cup confectioners’ sugar
Instructions
Step 1
In a food processor, combine walnuts and 1/4 cup sugar and finely grind.
Step 2
In a large bowl, with a mixer at low speed, beat butter and the remaining sugar. Gradually add flour, the ground-walnut mixture, and rum and vanilla extracts; beat until blended. Wrap the dough in plastic and refrigerate until firm enough to handle, about 1 hour, or freeze for about 30 minutes.
Step 3
Preheat oven to 325 degrees F.
Step 4
Work dough with lightly floured hands. Shape rounded teaspoons of dough into 2-inch by 1/2-inch crescents. Place on ungreased cookie sheets.
Step 5
Bake until edges are lightly browned, about 20 minutes.
Step 6
Dust cookies with confectioners’ sugar until well coated.
