  • 1.0 tablespoons Red pepper, crushed
  • 1.0 tablespoons Ginger, finely minced or grated
  • 6.0 cloves Garlic, finely minced or pressed
  • 1.0 cups Sugar
  • 1.0 cups Vinegar
  • cups Fish sauce
  • Peanut oil
  • 1.0 packet Wonton wrappers
  • 1.0 tablespoons Sesame oil
  • 1.0 tablespoons Brown sugar
  • 2.0 pounds Ground turkey
  • teaspoons Cornstarch (cornflour)
  • teaspoons Dry sherry
  • 3.0 tablespoons Light soy sauce
  • 1.0 tablespoons Ginger, grated or finely chopped
  • 6.0 onions Green onions, chopped
  • 6.0 cloves Garlic, crushed, minced or pressed

Step 1

Make the dipping sauce by mixing all of its ingredients. Store in the refrigerator until ready to use.

Stir together all filling ingredients (everything except the wonton wrappers and peanut oil). Mix vigorously by hand until it begins to bind together.

Place 1 1/2 to 2 tablespoons of filling in the middle of a wonton wrapper. Fold the sides up around the meat to form a small bag or cup. Press the bottom flat to stabilize the dumpling.

15 to 20 minutes

Oil the steamer racks with peanut oil. Place the dumplings in the racks. Steam for 15 to 20 minutes in a covered rack over boiling water. Serve hot with the dipping sauce.
