  • 3.75 cup all-purpose flour
  • 2.25 cup sugar
  • 1/3 cup plus 2 tablespoons cocoa powder
  • 1.5 teaspoon baking soda
  • 1.5 teaspoon salt
  • 3 large eggs, lightly beaten
  • 2.25 cup vegetable oil
  • 1.5 cup buttermilk
  • 1.5 teaspoon distilled white vinegar
  • 1.5 teaspoon vanilla extract (for cake)
  • 1 1-ounce bottle red food coloring
  • 1/2 cup butter, softened
  • 16 ounces cream cheese, softened
  • 1 teaspoon vanilla extract (for icing)
  • 2 cups confectioners' sugar

Preheat oven to 350 degrees F. Lightly grease and flour 3 (8-inch) cake pans.

In a mixing bowl, sift together flour, sugar, cocoa powder, baking soda, and salt.

Add eggs, oil, buttermilk, vinegar, vanilla extract (for cake), and red food coloring to the dry ingredients; beat at medium speed with an electric mixer until combined.

Divide batter evenly among the prepared cake pans.

Bake for 35 minutes, or until a tester inserted near the center comes out clean.

Let cakes cool in pans for 10 minutes. Remove cakes from pans and cool completely on wire racks.

Spread Cream Cheese Icing between the layers and on the sides and top of the cake. Garnish with any additional crumbs, if desired.
