- 1 large overripe banana (mashed)
- 1 cup bittersweet chocolate chips
- Confectioner's sugar(optional)
Instructions
Step 1
Pre-heat the oven to 350 degrees F and grease a 10-inch cake or springform pan with oil.
Step 2
In a large mixing bowl, whisk together the flour, cocoa powder, baking soda, baking powder and salt.
Step 3
In a food processor, process the sugar and butter until creamy. You can also do this by hand using a sturdy spatula.
Step 4
Add the vanilla extract, coffee granules and eggs, mixing well between each addition.
Step 5
Reserve a cup of the flour mixture and add the rest to the egg mixture. Mix until just combined.
Step 6
Add the mashed banana and mix. Do not overmix.
Step 7
Add the zucchini and chocolate chips to the reserved flour mixture and toss to coat.
Step 8
Fold into the batter and blend with a spatula. Do not overmix.
Step 9
Pour into the prepared cake pan and level the surface with a spatula.
Step 10
Bake for 40-50 minutes, until a knife inserted in the center comes out clean. Let it cool for 10 minutes, run a knife around the pan to loosen the cake and carefully transfer it to the cooling rack.
Step 11
Let it come to room temperature. Sprinkle with confectioner's sugar or glaze with melted chocolate.
