- 4 quarts water
- 2 cups water
- 2 tablespoons baking soda
- 30 figs
- 1 1/2 cups granulated sugar

Step 1
In a large bowl, combine 4 quarts water and baking soda.

10 minutes
Add figs and soak for 10 minutes. Drain the figs.

20 minutes (repeated)
In a large saucepan, combine 1 1/2 cups granulated sugar and 2 cups water. Bring the syrup to a boil, then add the figs and simmer for 20 minutes. Remove from heat and allow to cool. Repeat the process of simmering for 20 minutes after each cooling cycle until all the syrup is absorbed by the figs.

Step 4
Arrange the figs on waxed paper placed on trays, and dry them in the sun.

Dredge the dried figs with additional sugar and store them in an airtight container.
