Grilled Tomato-Basil Chicken

Ingredients

1/2 teaspoon minced garlic
1/2 teaspoon ground pepper
1/4 teaspoon salt
4 plum tomatoes, quartered
1/4 cup fresh basil leaves
4 (4 oz.) skinned, boned chicken breast halves, or 4 skinned (2.2 oz.) thighs

Preparation

Combine the first 6 ingredients in food processor bowl with steel blade; process until smooth. Set aside ΒΌ cup tomato mixture.

Place chicken in large heavy duty zip-top plastic bag.

Pour remaining tomato mixture over chicken; seal bag. Marinate in fridge 8 hours. Coat grill rack with cooking spray.

Heat grill to medium-hot.

Remove chicken from marinade, discarding marinade.

Coat tomato halves with cooking spray.

Place chicken and tomato halves on grill; grill, covered, 6-10 minutes each side or until done.

Place chicken on individual serving plates; top each with 1 Tablespoon reserved tomato mixture.

Arrange 2 grilled tomato halves on each plate with the chicken.
