Whole Wheat Sweet Potato Gnocchi in a Warm Rosemary Brown Butter Sauce

Ingredients

1 1lb package of Gia Russa Whole Wheat Gnocchi made with Sweet Potatoes
4 cups of water
1 dash of salt
2 tbsp of vegan butter (I use Earth Balance)
1/2 tbsp of freshly chopped rosemary
1 tbsp of unsalted sunflower seeds
1/3 cup of thinly sliced sweet onion

Preparation

1) Begin by bringing a pot of salted water to a boil over medium high heat,once water boils add gnocchi and cook for 2-3 minutes or until gnocchi floats to the top of the pot, drain and set aside

2)In a saute pan begin your sauce, add in vegan butter over medium heat, make sure butter is completely melted before adding in onions

3) Once butter has a nutty aroma and onions are softened add in rosemary and sunflower seeds, let toast for 1 minute

4) Add gnocchi to the saute pan and toss with the brown butter sauce

5) Dish out gnocchi and serve warm!

Walking in the door at 7:50 p.m. I found myself starving. I wanted a delicious healthy meal but simply couldn't stand the idea of taking the time to prep and cook a meal that would take any longer then 10 minutes. Desperately hungry I was quite tempted to simply bring out the hummus and pretzels and call it a night, luckily it was then that I remembered I had this package of Gia Russa Sweet Potato Gnocchi. I boiled some water In preparation for the gnocchi and made a simple warm brown butter rosemary sauce. I have to say this meal was probably one of my best yet and it only took a total of 15 minutes ( 12 of those minutes was the time it took to wait for the water to come to a boil). Definitely give this simple recipe a try for a quick week night meal.
