  • fresh cilantro sprigs
  • 2 tablespoons corn oil
  • 4 ounces feta cheese, crumbled
  • 1 teaspoon ground cumin
  • 1 cup chopped fresh cilantro
  • 1 red bell pepper, diced
  • 2 jalapenos, very thinly sliced
  • 4 large green onions, sliced
  • 12 eggs
  • 6 corn tortillas, halved
  • corn oil, for deep frying

Heat corn oil for deep frying in a heavy large saucepan to 375F. Add tortilla halves and fry until golden brown and crisp, turning occasionally.

Transfer the fried tortilla halves to paper towels and drain.

In a bowl, beat the eggs, ground cumin, chopped fresh cilantro, diced red bell pepper, very thinly sliced jalapenos, sliced large green onions, and half of the crumbled feta cheese. Crumble 4 of the fried tortilla halves into the mixture. Season to taste with salt and pepper. Let stand.

Heat 2 tablespoons of corn oil in a heavy large skillet over medium heat. Add the egg mixture and cook, stirring frequently, until just set.

Divide the cooked egg mixture among plates. Sprinkle the remaining feta cheese over the eggs. Stand 2 fried tortilla halves in each serving and garnish with fresh cilantro sprigs.
