  • Salt and pepper(optional)
  • 2 tablespoons Olive oil
  • 1 pinch Ground cumin
  • 1 dash Hot sauce
  • 1 teaspoon Minced fresh basil
  • 1 teaspoon Dried tarragon
  • 2 tablespoons Red wine vinegar
  • 2 tablespoons Lemon juice
  • 1 medium Cucumber, diced
  • 1 Garlic clove, crushed
  • 1 Green bell pepper, minced
  • 2 medium Tomatoes, diced
  • 1 medium Onion, minced
  • 3 cups Vegetable or tomato juice

Combine all ingredients and chill.

Alternatively, if short on time, cube the vegetables, then combine all ingredients into a blender or food processor. Blend slowly until the vegetables are chunky and the soup is well blended.
