Better Bean Salad

Ingredients

1 can each (preferably low salt) of:
yellow niblet corn,
Roasted red pepper (from a jar, about 1 whole pepper), chopped
4 scallions, white and green part, chopped
Flat leaf parsley, chopped
3 tablespoons red wine vinegar
2 tablespoons Chianti wine

Preparation

Rinse each can of beans and corn (and olives, if canned) under cold water.

Drain well and place in a large bowl.

Add roasted red peppers, scallions, and parsley.

Mix salad dressing ingredients and stir into the beans.

Let marinate at least an hour.

Serve cold or at room temperature.
