- 1 pound sea scallops
- 1 red bell pepper
- 1 red onion
- 3/4 tablespoon olive oil
- 1/2 teaspoon salt
- 2 cloves large garlic
- 2 jalapenos
- 4 slices gingerroot
- 2 teaspoon fresh thyme
- 1/4 cup dry sherry
- 1/4 cup white wine vinegar

Step 1
Prepare a BBQ fire or preheat a grill. Oil the grill rack.
Step 2
In a long, shallow dish, combine the white wine vinegar, dry sherry, fresh thyme, gingerroot, jalapenos, large garlic, salt, and olive oil. Place the scallops in the marinade, turning to coat. Let stand for about 30 minutes, frequently basting or turning.
Step 3
Thread the scallops onto the metal skewers, alternating with the red onion wedges and red bell pepper squares. Baste one final time with the remaining marinade, then place on the grill. Grill until the scallops are firm but not rubbery. Serve with the marinade as a dipping sauce.
