  • 1 teaspoon vanilla extract
  • 3 eggs
  • 8 ounce cream cheese cubed, softened
  • 1 can sweetened condensed milk (14 oz)
  • cup sugar
  • 1 can evaporated milk (12 oz)

Cook sugar in a saucepan over medium-high heat, stirring, until dissolved. Continue to cook, but do not stir, until sugar caramelizes and becomes a rich, dark brown. Pour into a 9-inch cake pan, spreading evenly. Cool.

Set the 9-inch cake pan in a larger pan, ensuring at least 1 inch of space around its sides. Blend evaporated and condensed milks, cream cheese, eggs, and vanilla in a blender. Carefully pour the mixture into the prepared 9-inch cake pan. Add about 1/2 inch water to the larger pan.

55 to 60 minutes (bake), then at least 4 hours (chill)

Bake at 350 degrees Fahrenheit until the center of the flan still jiggles a little when the pan is shaken. Cool, then chill at least 4 hours. Invert it onto a serving plate, slice, and serve.
