- 4 tablespoons brown sugar
- 90 grams brown sugar
- 4 count egg yolks
- 100 grams dark chocolate 75% Venchi
- 250 grams milk
- 250 grams cream
Instructions
Step 1
Preheat the oven to 100°C.
Step 2
In a saucepan, bring the milk and cream to a boil.
Step 3
Meanwhile, whip the egg yolks with 90 grams of brown sugar until light and fluffy.
Step 4
Remove the milk and cream mixture from the heat and add the chopped dark chocolate.
Step 5
Allow the chocolate to melt completely, then stir until the mixture is smooth.
Step 6
Gradually pour the warm chocolate cream into the egg-sugar mixture while continuously beating to temper the eggs.

Divide the mixture evenly among 4 ramekins.

Bake for 45 minutes.

Remove from oven and let cool completely on a cooling rack.

Cover the ramekins with aluminum foil and refrigerate for at least 12 hours, or until thoroughly chilled and set.

Take the crèmes brûlées out of the refrigerator 15 minutes before serving.

Preheat the broiler or grill.

Sprinkle one tablespoon of brown sugar evenly over the top of each crème brûlée. Place them under the hot broiler for about 2 minutes, watching carefully until the sugar caramelizes and bubbles. Alternatively, use a kitchen torch to caramelize the sugar. Serve immediately.
