  • 1.5 pounds sirloin steak tips, cut into 1 inch pieces
  • salt and fresh pepper
  • 2 tablespoons vegetable oil
  • 2 tablespoons unsalted butter
  • 3 large carrots, peeled and sliced thin
  • 2 large potatoes, peeled and cut into small cubes
  • 1 cup frozen pearl onions, thawed (may also use 1 medium onion chopped)
  • 1/4 cup all purpose flour
  • 2 cups low sodium beef broth or stock
  • 1 cup Guinness Draught

Step 1

Heat oil in a dutch oven over medium-high heat until just smoking. Next, add the beef and sprinkle with salt and pepper.

Cook beef until well browned all over. Transfer to a plate.

Melt butter in the now-empty pot. Add carrots, potatoes, onions and 1/2 teaspoon salt and cook until browned.

Stir in broth, beer and beef, along with any accumulated juices, and bring to a boil.

Reduce heat to medium-low and simmer, covered, until beef and vegetables are tender.
