I love recipes that only require prep and clean up and crock-pot recipes are perfect for a cool Fall day. Chili in the crock-pot was always a staple in my home growing up during the cold Fall and Winter months that living in Michigan brings. I hope you enjoy!

Ingredients

  • 1 pounds ground turkey
  • 1 can kidney beans (no salt added, organic)
  • 1 can great Northern beans (no salt added, organic)
  • 1/2 red pepper, chopped
  • 1/2 green pepper, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 16 ounces vegetable or chicken stock
  • 2 tablespoons tomato paste
  • 1 can diced or crushed tomatoes (no salt added)
  • 2 teaspoons cumin
  • 1/2 teaspoons cayenne pepper
  • 1/2 teaspoons paprika
  • 1/2 teaspoons black pepper
  • 1/2 teaspoons sea salt

Instructions

Step 1

Add ground turkey, onion, peppers and garlic to crock-pot set on high and cook while measuring out the spices and draining/rinsing beans.

Mix crock-pot ingredients then add in undrained tomatoes, tomato paste, kidney beans, great northern beans, and vegetable or chicken stock. Give the ingredients a thorough mixing then add in the spices/seasoning: cumin, paprika, cayenne pepper, salt and pepper.

Set the temperature to low and cook for about 4 and a half hours. Feel free to set the temperature to high and cook for about half the time, if you’d like.
