- 1 tablespoon oil
- 1 tablespoon vinegar
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 cup water
- 200 gram small red chillies

Remove stalks from chillies and chop them roughly.

Combine the chopped chillies in a pan with water and bring to a boil.

Reduce heat to low, cover, and simmer for 15 minutes.

Pour chillies into a food processor, add salt, sugar, vinegar, and oil. Blend until finely chopped. Store Sambal Oelek in a small glass jar (with a non-metallic lid) in the refrigerator for up to two weeks.
