Chicken/Coconut/Pineapple Kabobs

This is a recipe I make when we have company. Most people are skeptical about the coconut, then they try it and cannot get enough. It is so good grilled. If you can toast it, then it stands to reason you can grill it. Hope you try it out.

  • 1 pound boneless skinless chicken cut into cubes
  • 1 whole coconut, broken and cut into cubes
  • 1/2 can pineapple, cut into cubes
  • 1/4 cup Watkins Tropical Salsa

Instructions

Step 1

Break open your coconut, pull apart and cut into cubes. Soak in water while you prepare the other ingredients.

Cut up pineapple into cubes and set aside.

Cut up your chicken into cubes and set aside.

Grab skewers and load them with chicken, coconut, and pineapple in any desired order.

Prepare your grill by spraying or brushing it with oil to prevent sticking.

4 minutes on each side

Place kabobs on a preheated grill and cook for about 4 minutes over medium to low heat on each side.

2 minutes on each side

Brush with salsa and grill for about 2 minutes on each side, ensuring all sides are brushed.

Remove kabobs from grill and serve immediately.
